ABOUT CHITIN/CHITOSAN
Chitin/Chitosan is a naturally occurring macromolecule present in the exoskeleton of invertebrates. It is the second most abundant polysaccharide resource after cellulose. Chitosan has many uses, especially in the production materials with high gas barriers and the production of edible coatings. Interesting properties of Chitosan and Chitin are that they have antimicrobial properties and can absorb heavy metal ions. These properties are particularly useful for food packaging. However, as polysaccharide-based polymers, the only drawback is that they not suitable in moist conditions. [citation T2.25 T2.28]
